VEGAN PROTEIN PACKED DINNER: PAN SEARED TOFU AND ROASTED BROCCOLI

A delicious, quick, vegan lunch perfect for work or a day around the house.  

YOU WILL NEED: 

Tofu: 

1/2 brick firm tofu (3 by 2 piece) 

1/4 cup Soyaki

2 tablespoons rice vinegar 

Olive oil spray

Broccoli:

2 cups raw broccoli

2 tablespoons olive oil

Salt, pepper, chili flakes to taste

Cut tofu into 1 inch strips. Set aside and combine all tofu ingredients into a small bowl.  Place tofu in bowl and marinate for 20 minutes.  Spray a skillet on medium heat with olive oil and cook tofu for 7-10 minutes on each side.  Remove from heat and serve immediately.

Breakdown broccoli if needed. Spread out on a sheet pan and drizzle oil.  Toss broccoli and add all seasonings.  Toss once more.  Bake for 12 minutes on 350 or until crispy.
