HEALTHY-ISH VEGAN CHOCO CHIP BANANA BREAD MUFFINS
These are for the chill vegans/those who high key care about planet earth/people who just love banana bread and will happily reap the sustainable benefits lol
These are the best banana bread muffins things of all time. We don't even need to say anything else. Thats literally all you need to know. Oh and they're vegan because we love a vegan queen. MAKE THEM!!!!
Also I (ken) literally just decided to wing it with this recipe and they came out SO GOOD so give me some credit here.
1 1/4 cup flour
1/3 cup brown sugar, or #vegan sweetener of choice
2 tsp baking powder
2 tsp baking soda
2 ripe af bananas
2 tbsp coconut oil
1 tsp cinnamon
1 cup almond milk
Vegan choc chips to taste, because its your world and I'm just living in it!
Ok so prep your ingredients!
Preheat oven to 350 degrees F. Grease a muffin tin. Melt the coconut oil first in a separate bowl. Thank goodness you got that all out of the way.
In another bowl, mash bananas until they're all mushy. Yum. Mix in the sugar, oil and almond milk (in that order!!!!!!)
In another bowl, combine flour, baking soda, baking powder, and cinnamon. Once combined, fold dry ingredients into wet.
Pour muffin mix into the tin. I got 9 muffins out of this recipe, but it could be more or less depending on the tray you're using.
Top with chocolate chip! Or don't! Up to you!
Bake for 24 minutes, rotating the pan at 12 minutes.

You can use GF flour to make this GF friendly as well!
